Orecchiette is a typical pasta shape from the South of Italy, named after their shape resembling a small ear. Made from carefully selected durum wheat semolina. Ideal to be enjoyed, as per Apulian tradition, with fresh turnip greens. Fill a saucepan 3/4 full with water. Bring the water to a boil. Add 10 grams of salt for every 100 grams of pasta. When the water is boiling, add the pasta. Cook for the time indicated on the package. Drain and season to taste. Serve and enjoy.
