Homemade pasta
To make homemade dry pasta, durum wheat (semolina, semolina or wholemeal) must be used. The slow processing technique and the
bronze drawing, which differs from the Teflon one, gives the pasta the rough and porous characteristic, which allows it to better
absorb the sauce and to preserve the aroma and rich-type taste of the grain. Bronze drawing lengthens production times, but
guarantees better quality. The drying process can vary between two and six days.

Sample recipe Spagheti alla chitarra with tuna fish




Imagine coming home tired after a long day at work. Open the pantry and… remember that you haven't even managed to do theshopping. At the bottom of the shelf only tuna in oil... but don't despair! It can become the protagonist of a very tasty recipe: spaghetti with tuna! An easy-to-make dish, ideal for a last minute spaghetti dinner and a perfect dinner saver because tasty dishes can be prepared even with the simplest ingredients. Butterflies with salmon know it very well, don't they? So choose the meatiest tuna, a few basil leaves for flavoring and the best extra virgin olive oil! The sauce you will make will make this dish even tastier and more full-bodied and…dinner is served!

Spaghetti 320 g
Tuna in oil (drained) 150 g
Peeled tomatoes 400 g
Extra virgin olive oil q.s.
Salt up to taste
Black pepper to taste
Basil to taste
Golden onions ½

* To prepare spaghetti with tuna, start by heating a pot full of water on the stove, add salt to taste when it boils: it will be
used for cooking the pasta. Drain the tuna fillet from the conservation oil. In the meantime, peel the onion, slice it thinly
* Heat the olive oil in a pan and add the sliced onion
* Let it dry over low heat for a few minutes, stirring often; fray the tuna with your hands and add it to the pan when the onion has softened
* And let it brown for a couple of minutes, stirring constantly. Now, mash the peeled tomatoes with a fork
* And pour them into the pan with the tuna
* Let the sauce cook for about 10 minutes.

Meanwhile, boil the spaghetti
* Cook them al dente: by the time the pasta is cooking, the sauce will also be ready
* Drain the spaghetti directly into the pan with the tuna
* Season with ground pepper
* Put out the fire and perfume with fresh basil leaves
* Mix and serve your spaghetti with tuna piping hot!
