Collagen casing- PCS

Application for:

Cooked sausages
Cooked and/or smoked sausages
Working ideally for cooked and cooked+smoked sausages

Product advantages:

Caliber consistency, which can keep the product in uniform size and can be used for quantitative filling;
Good moisture, air and smoke permeability, in the process of somke the air and moisture are allowed to penetrate but not result in the loss of contents;
Good heat stability, which can keep the consistency of the product size during cooling and storing and there will be no space bubbles appear;
Suitable for high temperature roasting and make sausages distinguishable among others due to the good "bite";
Excellent machine-ability for high outputs.

Recommendations for use:

Ready-to-use casing. Not soak before stuffing;
Work surfaces(tables and filling tubes, etc.) in contact with casing should always be clean and dry;
Cooking temperature should not exceed 82℃;
Handle without deforming the stick and keeping casing moisture;
Do not overfill is recommended. Do not exceed 1mm over nominal caliber;
Horn size should be less than the casing inner size about 1-2mm,in order to ensure the casing can move forward smoothly in the stuffing process.
