Introduction	Coated with a royal green skin, these beans are also known as Green Bean in China. Mung Bean is the most popular bean known in the entire world for its bean sprouts and in various parts of the world. Whole mung beans are generally prepared from dried beans by boiling until they are soft. With their skins removed, mung beans are light yellow in color. They are made into mung bean paste by de-hulling, cooking, and pulverizing the beans to the consistency of a dry paste.
