Iwakuni Lotus Root Noodles With Condensed Bonito-Based Soup Stock (2 Servings)






What is udon?
Thick, chewy, white noodles that are made by cutting roughly 5mm strips of flour that has been kneaded well with Japanese soft water and salt before being stretched into a sheet.
There are countless variations of shapes in each region. There is even a type that is stretched thin to become a sheet that is about 50mm.
The soup that is included is a bonito-based soup stock that is common in western Japan.

What are lotus root noodles?

The shape of the noodles is a registered design called “torishikake,” and they are made through a 60-hour process of curing and drying.
The color resembling soba noodles comes from tannins, a type of polyphenol, and they are made from the skin of lotus roots, containing 16g of raw lotus root, including the skin, in each serving.
These versatile noodles have a texture like fresh pasta, and go well with Japanese, Chinese, or western soups.






Lotus root is a light-colored vegetable with high dietary fiber and polyphenol content. It is rich in the vitamins C, B6, and B12, as well as iron, potassium, copper, zinc, tannins, lectins, and other vitamins and minerals.
The vitamin C content rivals that of lemons.




We do not use any buckwheat flour, which is a common allergen, or lye water, which has high phosphorus content and is used as a food additive in most instant noodles to give them a firmer texture.
Enjoy the firm al dente texture created by using Japanese wheat flour, Iwakuni lotus root flour, Okinawa Shimamasu salt, and Hiroshima oyster shells instead of lye water (which helps the noodles keep their firm texture long after kneading)!
