It has been well known since Antiquity. According to the myth, the Olive Tree was presented to the Greeks by the goddess Pallas Athena.
In Greece, Italy and Spain, extra virgin olive oil is called "liquid gold" because it is the basis of the Mediterranean diet, as well as most of the skin care products for the face and body.
Its main components are triglycerides of essential omega-9 oleic and omega-6 linoleic acids, making up more than 90% in total.
Current studies of the composition of cold-pressed olive oil have shown that the biologically active polyphenols present in it give the oil its characteristic taste and aroma and are responsible for its beneficial properties for the cardiovascular system, digestive tract and antioxidant activity.
