What is KATSUOBUSHI?
・Katsuobushi, also known as dried bonito, is one of the traditional and unique foods in Japan.

■Single Serving Pack (Bulk)




・It is processed into small-sized shavings so that it can be easily sprinkled on dishes.
・After shaving thinly, it is crushed (cut) into small pieces, so it is easy-to-eat size and
 the texture is quite soft.
・Sprinkle directly on okonomiyaki, takoyaki, tofu, etc.

■Distinguish "Karebushi (Mujirushi Katsuo Pack 1g)" & "Arabushi (Mujirushi Katsuo Pack 0.7g)"




・“Arabushi” is the one that katsuo (bonito) has been boiled, smoked, and dried.
・“Karebushi” has one more process involved, which we apply mold on the surface of “arabushi”
 and dry it to reduce its moisture content.

In general, the period of production process for “arabushi” is approximately 3 weeks.
On the other hand, “karebushi” takes several months, depending on how many times we do the mold coating process.
The mold also enhances its flavor further, therefore karebushi will create the aromatic, elegant and firm flavored dashi.

We summarize its merits of why the fermentation by mold is essential.
 1)It increases transparency of soup stock by decomposing fat substances in katsuobushi.
 2)It makes the aroma better. Furthermore, we define a new category called “honkarebushi”
  if repeating mold coating process over 4 times.

Taste-wise, “arabushi” gives you a strong aroma and a sharp finish.
“Karebushi” gives you an elegant aroma and a mild taste.
