What is ”Saihen"?




Katsuobushi, also known as dried bonito, is one of the traditional and unique foods in Japan.
Saihen is one of katsuobushi's shaving types, which is not too big and not too small flakes.
After shaving dried bonito pieces thinly, we cut it more into small pieces as Saihen.
Saihen is easy-to-eat size and the dishes will even look beautiful.




■How to Make Katsuobushi (Arabushi and Karebushi)
・First, the rib bones of selected bonito are removed, and the fillets boil (shajuku) for an hour to an hour and half.
・Second, smoke for several days (baikan) the fillet to harden and enable to acquire distinctive aroma.
・The last stage of creating katsuobushi is to allow the fillet to sun-dry by the assistance of mold(kabi-tsuke).

・Arabushi:Katsuobushi that is boiled, smoked.
・Karebushi:shave the surface of Arabushi and then culture the beneficial mold twice or more.

・There are many usases such as soup stock and toping on salad.
