What is KONGOU KEZURI (mixed shaving)?





First, Katsuobushi, also known as dried bonito, is one of the traditional and unique foods in Japan.
Kongou Kezuri is like katsuobushi but made by blending multiple dashi materials such as bonito, mackerel, mackerel scad, bullet tuna, and sardines to create cohesive broth.
Compared to ordinal dried bonito flakes, it has a stronger body.
Recommended for any kind of noodle broth such as ramen, udon, and soba.

■How to Make Dashi (Simple Soup Stock)




・Bring the water to a boil, then reduce the heat to low and add about 3-5% weight of thick shavings to the water (25g for 600ml of water).
・Boil over low heat for about 5 minutes.
・When shavings have all sunk to the bottom, scoop them out or strain with either a cloth or paper towels.
