What is"JIKABIYAKI HONKATSUO"?




First, katsuobushi, also known as dried bonito, is one of the traditional and unique foods in Japan.
Marutomo's jikabiaki honkatsuo is special and high quality katsuobushi product.
Jikabiyaki honkatsuo products have a rich umami, so that umami component tends to melt down when you put into a mouth.

■Characteristics of JIKABI Products




We carefully select a bonito raw material and start a boiling process before the raw material is fully melted to enrich Inosinic.
We also carefully boil moderate temperature to enrich free amino acids.
Before shaving to make dried bonito flakes, Marutomo's original "direct fire roasting"「JIKABI BAISHOU」technology has made it possible to confine the umami and richness of bonito.
As a result of these processes, 20% more free amino acids than Marutomo’s general dried bonito flakes and Inosinic acid increased by 30%.
Compared to our general dried bonito flake products, there are more umami component in JIKABI products.
You can reduce the amount of salt added during cooking because of richness of umami.

■Soft Shaving Products




・The texture is soft because the bonito fibers are cut off.
・You can enjoy smoky yet savory aroma.
・Please use it for various dishes such as topping for udon noodles, cold noodles, and hiyayakko (cold tofu).

■Crashed Type Products




・Crashed type products (saihen) are made into small pieces, so it is ideal for sprinkling.
・After making dried bonito flakes, it is crashed into small pieces, so the texture is quite soft.
・Sprinkle directly on okonomiyaki, takoyaki, tofu, etc.

■Hanakatsuo Products




Marutomo also developed Hanakatsuo type JIKABI products by blending "highly extracted bonito (high amino acid content)” and "high inosinic acid bonito (high inosinic acid content)” to enhance umami and richness of bonito.
Not only perfect fit for making broth but also topping on okonomiyaki, takoyaki, and hiyayakko (cold-tofu).
