Cheese that comes from forms of Grana Padano discarded in the certification phase for small defects as required by the PDO specification. To all intents and purposes the retinato has the characteristics of a Grana Padano.

Half-fat hard cheese, cooked and slow maturing, obtained from vaccine milk with the production method described in the production rules of the Grana Padano Protection Consortium.
