Duck feet mix A/B are the feet cut off from the bird in the ankle or up to 2cm below the ankle; mechanically cleaned from the
epidermis, but may be a slight residue of the epidermis. These feet are taken from the production without grading - but should be
clean, bled, drained, in good shape; black beads in the plantar area, in amounts up to 75 - 90% and the fracture to 40 - 80% are
allowed. They may also minor damage and redness of the skin and remove traces of lumps on the plantar area.
