Sodium tripolyphosphate (STPP), the sodium salt of the polyphosphate penta-anion, also known as pentasodium tripolyphosphate or sodium triphosphate (different with trisodium phosphate), is a synthetic ingredient mainly used for retaining moisture in fish. The European food additive number for it is E451(i).

Property

White particle or powder, appearant density 0.35-0.90g/cm3, melting point 622℃. Easily soluble in water, aqueous solution is alkali. Hydrolyze to orthophosphate in water, complexing with calcium, magnesium, iron and other metal ions and generate soluble complex. As inorganic surfactant, it has certain properties of organic surfactants.

USAGE

In Food:
The uses of stpp include using it as a preservative. Sodium Tripolyphosphate STPP can be used to preserve foods such as red meats, poultry, and seafood, helping them to retain their tenderness and moisture. In foodstuff industry it is used as quality improver in the process of canned food, fruit juice drinks, foodstuffs from milk or soybeans.
In Industrial:
Used as one of the main auxiliaries for synthetic detergent, synergist for soap;Water softener, tanning agent for leather making, auxiliary for dyeing; As an oil contamination resistance agent in paper production.leather tanning (as masking agent and synthetic tanning agent - SYNTAN), anticaking, setting retarders, flame retardants, paper, anticorrosion pigments, textiles, rubber manufacture, fermentation, antifreeze."STPP is used as a polyanion crosslinker in polysaccharide based drug delivery
