Arachis oil is also known by the names peanut oil or groundnut oil. This is vegetable oil that is derived from peanuts. This nut originates from Brazil. However, nowadays the nuts are grown in all tropical regions. The oil is a clear and light-coloured oil. When the oil is heated to high temperatures, it smells of peanuts. Arachis oil contains a high percentage of monounsaturated fatty acids and a relatively low percentage of polyunsaturated fatty acids. Arachis oil is therefore considered to be one of the best basic types of oil for prolonged heating; this oil is therefore perfect for stir-frying, for example, vegetables.
Origin
Groundnut oil mainly originates from the continents Africa, South America and North America.
Colour and flavour
Arachis oil is light yellow in colour and has a neutral flavour.
Use
Peanut oil can be heated to a high temperature – the smoke point is at around 210°C so the oil is ideal for frying, sautéing and deep frying. Furthermore, the oil does not turn rancid quickly, meaning this is very popular among Dutch doughnut bakers. You can also use arachis oil in dressings and in marinades and mayonnaise. Store this oil at room temperature because the oil crystallises at temperatures below 10°C. Heating the oil will dissolve the crystals.
Keep at room temperature 20 degrees and protected from light. Close tightly after use.
