From olive harvesting to oil extraction, we manage every stage of production by adopting the most modern sustainable organic farming techniques, minimizing the impact on the environment. The total absence of pesticides and harmful substances guarantees the highest quality of our organic extra virgin olive oil.


 



 


 


Organic extra virgin olive oil obtained from local hand-picked olives



We collect our olives near Gravina in Puglia and process them in the mill within 3 hours of harvesting. This allows us to obtain an extra virgin olive oil with very low maximum acidity (0.3%), rich in antioxidants, medium fruity, highly appreciated for its aroma and qualities. 


 


 


 


Cold pressed, superior quality and tradition since 1894



Once ripe at the right point, we hand-pick our Coratina, Bambina and Peranzana variety olives. We work them only with traditional mechanical processes, without adding processes or chemicals. In addition to preserving its qualities, the cold mechanical pressing guarantees the integrity and genuineness of our extra virgin olive oil.

Storage



Extra virgin olive oil does not have a real expiration date. We recommend consuming it within 12-18 months from the bottling date. However, proper storage of the oil helps to maintain its qualities longer. Here are some tips:


 


Temperature: store the oil away from heat sources in rooms between 10 and 20 degrees. Do not store it in the refrigerator;
Closing: always keep the container hermetically closed. Prolonged opening facilitates oxidation and absorption of foreign odors. Keep the oil away from detergents or hygienic products.
Light: store the oil in the dark to protect it from sunlight and prevent oxidation.
