In Nigeria, we use this in rice dishes, stews, sauces, and more. For this recipe, we use whole spices that are gently toasted, then ground down to add even more depth of flavor.




How To Use


DISH ONE: Mince curry with parathas




COOKING INSTRUCTIONS
1. Heat the oil and butter in a large saucepan and sauté the onions until soft and slightly browned. Add the tomatoes and cook for 10 minutes.
2. Add the curry powder and simmer for 15 minutes. Crumble the mince into the pan and stir through until well combined. Cover with a lid and cook over a medium heat for 20 minutes.
3. Add the potatoes and cook for a further 15 minutes, or until soft. Add the peas if using and cook for 5 minutes.
4. Add the chopped coriander just before serving. Serve with the parathas and sambal.


DISH TWO: Indian lamb on the bone with pineapple-and-coriander raita




COOKING INSTRUCTIONS
1, Heat the oil in a cast-iron pan over high heat. Brown the lamb, then remove from the pan.
2, Reduce the heat and gently fry the onions in a little more oil until soft. Add the curry powder and cook for 2 minutes.
3, Return the lamb to the pan and add the tomatoes. Cover with foil or a tight-fitting lid and simmer over a low heat for 1 hour.
4, Add the potatoes, and a little water if necessary, to the pan and cook in the oven for 30 minutes, or until the lamb and potatoes are tender. Season to taste.
5, Melt the ghee in a saucepan and mix in the peanuts and crispy onions. Pour over the jasmine rice. Serve the curry with the pineapple and-coriander raita, basmati rice and rotis.
