Bees take nectar or secretion with water content of about 75% from the flowers of plants and store them in their second stomach. The nectar or secretion with water content less than 23% is honey. Honey is a supersaturated solution of sugar, which will crystallize at low temperature. Glucose is the main component that does not produce crystallization.
