Palm kernel oil contains slightly more unsaturated acids than coconut oil, so its iodine value is higher. Fresh palm kernel oil is edible. Palm kernel oil can also be divided into solid and liquid by crystallization and pressing. Solid fat can be used as a substitute for cocoa butter, and liquid oil is used for baked goods, hydrogenation or soap making. Palm kernel oil has no special color reaction.
