BRAID BUFFALO MOZZARELLA CHEESE DOP

This dairy product is produced only with fresh and whole buffalo milk of the Italian Mediterranean breed. The animals must be registered in the registry and are reared according to local customs in semi-free housing, in open pasture. Milk with a minimum fat content, established by the specification, must be delivered to the dairy for subsequent processing within 60 hours of milking. Coagulation is obtained by adding natural enzymes deriving from previous buffalo milk processing to the milk heated to 33-36 ° C (the so-called "whey graft"). The curd, broken to obtain walnut-sized grains, is matured in whey for about 5 hours and then reduced into strips spun in water at 95 ° C and "cut" to obtain the desired size. The pieces obtained are kept in cold drinking water and salted in brine for variable times: once packaged they are stored in the preserving liquid. Dairy is released for consumption in various forms: round, morsels, braids, beads, cherries, knots, ovoline, with weights from 20 to 800 g. The color of the crust, smooth and one millimeter thick, is porcelain white, the thin pastry is elastic, within the first 10 hours from packaging, then more melting, without holes: when cut, a slight white and greasy serosity is released perfume of lactic ferments. The flavor is distinctive and delicate.
