What is ATSUKEZURI (Thick Type)?




First, katsuobushi, also known as dried bonito, is one of the traditional and unique foods in Japan.
As the name, Atsukezuri suggests, it is a thicker fish flakes compare to general bonito flakes.
Unlike general bonito flakes, by slowly drawing out the umami of bonito in hot water, you can get a rich and "strong" broth with rich flavor.
The strength of umami means that you can feel the taste of broth even if you use a seasoning with a strong taste.
Recommended for any kind of noodle broth such as ramen, udon, and soba.

■Thick Type Dried Bonito Flakes Products




・Uses bonito as a raw material that have a strong scent and umami (arabushi).

■Mixed Type Products




・Mixed thick shaving products that are specially made by blending multiple dashi materials such as mackerel and sardines.
・The rich taste of mackerel and sardines, and the sharpness of dried bonito are a good match.

■How to Make Dashi (Simple Soup Stock)




・Bring the water to a boil, then reduce the heat to low and add about 3-5% weight of thick shavings to the water (20g for 600ml of water).
・Boil over low heat for about 20 to 30 minutes while removing the lye and turn off the heat.
・When thick shavings have all sunk to the bottom, scoop them out or strain with either a cloth or paper towels.

■Recipes
You can make broth for any kind of noodle broth noodles just by adding soy sauce and salt.
