・What is KATSUOBUSHI




Katsuobushi, also known as dried bonito, is a smoked fish foodstuff unique to Japan.
It is created by simmering Skipjack tuna that is then smoke dried and allowed to harden before being coated with mold.
It is then shaven down finely to make flakes and used as simple soup stock or as dashi itself.

For Marutomo's katsuobushi, every step of the manufacturing process undergoes strict quality assurance, starting with the selection of fish.
We are able to create a higher grade of katsuobushi under the careful supervision of skilled craftsmen who are able to identify a fish's freshness and fat content.


Katsuobushi is something that goes well with dishes from around the world as both a topping and as dashi.

It goes well with lightly seasoned dishes such as osuimono and chawanmushi.
Sprinkle on okonomiyaki, takoyaki, or udon to make the dish even more delicious.

How to Make Dashi (Simple Soup Stock):




❶ Bring 600ml of water to a boil.
❷ Turn down the heat slightly and add 20g of katsuobushi.
❸ Simmer for two minutes uncovered. Turn off the heat and allow it to sit.
❹ When the Premium Dried Bonito® flakes have all sunk to the bottom, scoop them out or strain with either a cloth or paper towels.

  You can make broths for soba and udon noodles just by adding seasonings such as soy sauce and salt into dashi.
  You can also enjoy katsuobushi's tender texture by sprinkling on okonomiyaki and takoyaki.
