VINIFICATION AND AGING
The grapes are softly de-stemmed and transferred into temperature-controlled steel tanks during the alcoholic fermentation,
without the use of selected yeasts. The alcoholic fermentation lasts for 12-15 days at a temperature between 24°- 26°C, during
which the Remontage (pumping over) and Delestage (a fermentation and maceration) techniques are performed. This guarantees the extraction of noble substances from the peel. At the end of the malolactic fermentation, the wine continues the aging period for about 6 months in a cement tank with slight micro-oxygenation using the Batonnage (lees stirring) technique. Then, it is bottled and aged for another 3 months.

SENSORY CHARACTERISTICS
Deep ruby ​​red color, with a purple rim given by the richness in the free anthocyanins. The smell is very intense, with vinous,
cherry and rose aromas. The taste is balanced between the acid and tannic components, with an excellent, full-bodied structure and
an enveloping finish.

In 1949, the estate and business was purchased by Giuseppe Barni. Under his leadership, the care for the vineyards improved and the production of wine increased. For three generations, the business has continued its production, continually seeking higher quality standards.

Fast forward to present day, we are the fourth generation operating the vineyards with the same ambition as our ancestors: to take care of the vineyards while fully respecting nature. This is what led us to become a fully organic vineyard, focusing on high-quality products and using ancient production techniques. The knowledge gained over generations has allowed us to respect the past, while keeping up with the latest technological developments.
Our company is located in the hills of Montespertoli, just outside Florence. It is a historical territory for the production of Chianti wine. Sustainability, protection of native vines and biodiversity are the key components of our philosophy.

Our land includes 150 total hectares, including 43 hectares of vineyards.

The vines we grow are predominantly Sangiovese, of which we develop over 29 different clones. We have always and continue to pay close attention to the protection of our native vines. We cultivate: Canaiolo and Colorino (which together with Sangiovese are the basis of our Chianti Coeli Aula), Ciliegiolo, Pugnitello and Trebbiano.

We also grow international vines, such as Merlot, Cabernet, Chardonnay and Sauvignon Blanc.

All our wine, oil and grain products from the year of production 2019 are Organically Certified.
