The olives are harvested early in the morning, by hand and directly from the tree, placed in ventilated boxes and brought within a few hours to the Cooperative.
Here, the olives are carefully selected according to strict evaluation criteria and then destined for the subsequent processing and storage phases.

Our Green Olives are processed naturally, they are characterized by the clear fruity scent of fresh olives, crunchy with tonic and fleshy pulp. The flavor has a perfectly balanced taste with a clear but light reference to the sea.
The process of removing the stone takes place strictly after the maturing processes, thus preserving the famous balance that distinguishes our olives in brine.

The Cooperative was founded in December 1962
by a group of 31 local citizens and olive growers,
with the aim of improving the quality, production
and marketing opportunities for an already excellent natural product.

Today, over 1,200 hectares cultivated by our members, reaching a total of over 169,000 olive trees, are divided between the cooperative’s 432 members and staff, who carry on this ancient vocation with pride and passion.
